I've been having a bug or I'm messing something up where on play it always goes to game over so I have to restart the game. The console isn't giving me any info so I'm wondering if it's something you've seen before.

Either one of 2 things:
1) You have "use global waves" checked but you have no global waves, so the game is over. 2) You have defined a World Variable Value to trigger game over, and you started the game with that value already present because it's persisting from before (i.e. 0 lives).
From the documentation website:
Use Global Waves: Off by default. Turn this on if you use Syncro Spawners so that you can set up Global Waves. When your final Global Wave complete, it will trigger "Game Over", which will turn off all Triggered Spawners and Killables unless you change their Game Over Behavior from the default of "Disable". Game over can also be triggered by World Variable values if you configure them that way.

So I deleted all of the variables and I'm still getting the same thing. My main confusion is why does it work fine once I manually restart if the spawners are messed up. Is there a way to figure out what's triggering the game over?

My other issue with resetting everything up is that I'll lose all of the prefabs I have in pool boss and I'm not sure of what issues that would cause.

If you've Lost and not Won, it will log the call stack to the Console if you turn on "Log Messages" on LevelWaveSettings game object (but this only works if you've set up a Listener). If that doesn't tell you anything, then add a Debug statement to line# 1688 in LevelSettings.cs, in the set of IsGameOver property.
I've added, for the next release, a lot if you've won or lost, regardless of Listener.

Deleted the wave settings and resetup pool boss and that fixed it. It must have gotten bugged along the way.
